My mom [Patsy] has a treasured collection of recipes gathered over many years.  Sometime ago, she brought all her recipes over and I scanned them as .jpg images.  Over the past few years, I have been getting requests for copies of these recipes from other family members 😉  This site is a tribute to those recipes and as time permits, I will upload more of her recipes.  But… please feel free to upload some of your own favorites.  It’ll give you a great place to always have access to it and allow you to share it with others.  HOWEVER… I am going to require you to create an account to help me prevent spammers.

FILIPINO BANANA LUMPIA

FILIPINO BANANA LUMPIA

Quick and easy way to make Filipino Banana Lumpia, caramelized banana egg rolls.

YOU’LL NEED…
8 square spring roll wrappers

4 ripe bananas or plantains

1 cup light brown sugar

Water for sealing wrappers

Vegetable oil

LET’S GET COOKING…
Slice bananas into quarters, and roll the pieces in the brown sugar.

Place 1-2 slices on one bottom corner of a wrapper, roll, fold, and seal. Repeat the process.

Heat enough vegetable oil to fill a pan halfway. Fry the lumpia until golden brown on one side, flip and sprinkle a little brown sugar on top. Cook the other side until golden brown, flip and sprinkle the brown sugar on top again.

Place on paper towels to absorb excess oil.

Serve alone or with ice cream.

Slow Cooker Steel Cut Oatmeal

Most of us are too busy to make breakfast in the morning, so a big pot of steel cut oatmeal made in a slow cooker is the perfect solution to make sure you always have a healthy meal to start the day.

Prep time: 5 min

Cook time: 8 hr

Total time: 8 hr 5 min

Serves: 10-12

Ingredients

  • Steel cut oats – 2 cups
  • Water – 6 cups
  • Milk (any type) – 2 cups
  • Butter – 2 Tbsp
  • Apples, peeled & chopped (optional) – 2 to 3
  • Brown sugar – ¼ cup
  • Kosher salt – 2 tsp
  • Cinnamon – 1 Tbsp
  • Star anise (optional) – 2 to 3

Instructions

Prep

  1. Apples (if using) – Prep as directed.

Make

  1. Optional: Give the slow cooker a quick spray of cooking oil or brush with cooking oil to prevent sticking of ingredients.
  2. Put all ingredients in a slow cooker. Cover and cook on low for 8 hours or 4 hours on high.
  3. Top with nuts, yogurt, fruit, jams, coconut shavings!
  4. If you don’t have a slow cooker, bring the ingredients to boil in a large saucepan or Dutch oven and then simmer for 45 minutes, stirring here and there to make sure it doesn’t stick to the bottom of the pan.
